Vineyards
Variety: 50% Sangiovese, 50% Cabernet Sauvignon
Vineyards: The Sangiovese comes from the Poggetti vineyard
in Montepulciano, while the Cabernet Sauvignon is from
La Selva, our Cortona vineyard.
Altitude: From 200 to 375 metres above sea level
Exposure: Variable, depending on the individual vineyards.
Soil: Variable, generally clayey.
Age of the vines: From 15 to 38 years
Plant type: Bush-trained, Guyot, and spurred cordon.
Density: From 2,564 to 7,158 vines per hectare

Vinification
Harvest: The Sangiovese from the younger vines was harvested between
September 25th and 26th, while that from the
older vines on October 9th, and the Cabernet Sauvignon was
harvested on October 10th, 11th, and 12th.
Vinification: Separate vinifications for the two varieties in stainless
steel vats using indigenous yeasts. The alcoholic
fermentation with subsequent maceration on the skins lasted
23 to 27 days for the Sangiovese, and 28/29
days for the Cabernet Sauvignon. The malolactic
fermentation took place in barriques.
Aging: 18 months in wood. 30% new oak barriques for the
Cabernet Sauvignon, the remaining 70% in 2nd and 3rd passage barriques. 15% new barriques and tonneaux for the
Sangiovese, the remaining 85% in 2nd, 3rd, and 4th passage barriques.
Alcohol content: 14.5%
Total production: 33,000 bottles

Tasting Notes
The warm, dry 2012 vintage favored the production of a Grifi with
intense color and great structure. Ripe aromas of red and black berry fruit
combine with sweet spices, toasted wood, and Mediterranean underbrush. On the
palate, it is warm, dense, and austere with crisp tannins, the hallmark
of a great vintage. The finish is long, enveloping, and savory, with
a light balsamic touch. It is a perfect wine for long aging
in the bottle.
