PRODUCT INFORMATION
This wine was born as a challenge, one that I hope to consider accomplished: to produce a great rosé wine in Cortona, using our Syrah grapes as a white wine, a Syrah rosé that can be enjoyed not only in spring and summer, but throughout the year, as a valid alternative to white wine, and also capable of aging in the bottle. Balanced, textured and crisp, taut, juicy and intense, fine and elegant, long...that's how I dreamed of it, and that's how those who have tasted it describe it. Exactly the rosé we hoped to achieve.
Rosa del Castagno
Rosa del Castagno is made exclusively with Syrah grapes grown in our vineyards, all characterized by very low yields per hectare (a maximum of 5,000 quintals from 5,000 vines). Carefully selected specifically for this wine, especially before and during the harvest, which takes place at the end of August, well before the start of the harvest for our red wines. The harvest takes place at dawn, exclusively by hand, in small 15-kg perforated crates. We then perform a true "white" vinification: after an extremely gentle destemming and crushing, the grapes are immediately and equally delicately pressed (for a maximum of about three hours). Only the free-run must is transferred to steel tanks where it ferments at low temperatures for about 15 days, without further contact with the skins. After approximately six months of maturation and aging at low temperatures on the fine lees, punctuated by frequent batonnages (stirring the lees), and a period of natural stabilization and clarification in the cellar, the wine is bottled. Its distinctive, captivating pale pink color with amber highlights, its fresh, floral, and fruity fragrance, its remarkable persistence, its pronounced acidity, its characteristic sapidity, and its distinct minerality are the natural result of these simple, ethical, and eco-friendly cultivation and winemaking practices, characterized by the finest "technological craftsmanship." Above all, they are the fruit of Cortona's magnificent terroir and the unique soil of our vineyards, which has also given us this delicious rosé version of Syrah.
