100% Sauvignon (from the first 8 rows of Enos)
Vineyards
The grapes come from the first rows planted by grandfather Enos on the Crine di Montauto. The vines are over 45 years old, in a phase of natural vegetative equilibrium: the
naturally low yield gives rise to very small bunches with a high
concentration of juice and aromas. Managed organically, the vineyard is
treated only with copper and sulfur and fertilized with stable manure. The soils,
mainly clayey and rich in iron, quartz, and slate, are located 200
meters above sea level and 10 km from the coast, in a unique and pristine terroir,
characterized by the constant sea wind and significant temperature variations.
Training
High spurred cordon to ensure shade for the grapes and to
benefit from the cooling effects of sea breezes.
Harvest
Once fully ripe, the grapes are selected and harvested by hand and
placed in small crates. Harvesting takes place in the early hours of the
morning to ensure a low temperature upon arrival at the cellar.
Vinification
Before pressing, the grapes are placed in a cold room overnight to
enhance greater extraction of aromas and prevent oxidation. The grapes are then
softly pressed on the whole bunch. This is followed by decanting for 36 hours and
fermentation in stainless steel at a controlled temperature of 16°C. All
the energy used during the production process comes from renewable sources.
Maturation and Aging
Part of the wine ages for 6 months in wood, followed by aging in bottle for
three years: the necessary period to forge a white wine with significant character.
Wine
An intense yellow color, or rather, antique gold, presages a progressive and
dynamic nose, statuesque in its definition of the many aromatic notes that inhabit it,
ranging from dried fruit (almonds) to dried citrus peel,
passing through lemon leaf. All this composes more choral notes of old-fashioned
pastries, biscuits, sugared almonds, and marzipan, anticipating a sip with a
creamy, imposing, and concentrated consistency, enlivened by the harshness of a
stentorian savoriness, softened by the imposing glycerine counterpart.
