Wine obtained from Sangiovese and Cabernet Franc grapes, the grapes are subjected
to a pre-fermentative maceration for about 48 hours. Fermentation takes place in steel at a controlled T of around 25-26 °C. and lasts a total of about 25-30 days. Description
Wine obtained from Sangiovese grapes and international vines (variable percentages depending on the vintage of Merlot-Cabernet Franc and Petit Verdot) grown with very scrupulous attention paid to green pruning and thinning of the bunches, to obtain limited yields and optimize the quality of the final product.
The grapes are collected in crates and immediately transported to the cellar, subjected to a meticulous selection on a double sorting belt, and are sent by gravity into steel tanks where the grapes are subjected to pre-fermentation maceration for about 48 hours. Fermentation takes place in steel at a controlled temperature of around 25-26 °C and lasts a total of about 25-30 days. The wine rests for a minimum of 12 months in 10 hl wooden barrels for the Sangiovese and barriques for the international ones; then it is reassembled to return to the barrel for a further year of maturation. This is followed by a further phase of refinement in the bottle for at least 8 months. The care and techniques used in all the various processing phases allow us to obtain a complex, intense and harmonious wine that fully reflects our land.
