This Riserva was re-proposed starting from the 2010 vintage, almost 20 years after its last edition in 1992. We took that break because in the last 26 years we have progressively re-selected and replanted our historic vineyards; we had concentrated on clonal selections, on the different expressiveness of Sangiovese in relation to soil and climate variations and on the possibility of combining the characteristics of Sangiovese with other international vines. In 2010, however, we found an increased complexity and structure in the grapes of the first replanting of native vines, which convinced us to re-propose the Riserva di Vino Nobile only from native grapes, just like in the 70s and 80s.
Characteristics of the soil This is the historic core of the Poderi Boscarelli vineyards in Cervognano. They are vineyards planted on calcareous, alluvial and sandy soils with a good percentage of silt, clay and minerals, as well as rich in stony skeleton that varies according to the location. The average planting density is now 6500 vines per hectare.
Type and selection of grapes The wine is produced with selected grapes in vineyards that are at least 20 years old, which give it greater complexity and excellent aging potential. The vines that contribute to the composition of Vino Nobile Riserva are mainly Sangiovese Prugnolo Gentile with a balance of Colorino.
Winemaking The grapes are harvested by hand and transported in crates; after destemming and soft pressing, they are left to ferment in oak vats filled to no more than two-thirds of their capacity. Native yeasts are used during the fermentation process, which lasts about 10 days at controlled temperatures between 28 and 30 degrees. Manual pumping over and punching down of the cap are carried out. Maceration, if necessary, continues for another 5/8 days after fermentation.
Aging The Riserva ages in Slavonian or French oak barrels with a capacity ranging from 5 to 25 hl. Malolactic fermentation gives elegance and finesse to this wine. Maturation lasts from 28 to 32 months. Before being released for sale, the wine ages in the bottle for a few months.
Optimal maturity The aging potential of our Riserva is several decades, while the optimal maturation period recommended by us varies, depending on the vintage, from the fifth to the tenth year after the harvest.
