Average grape yield per hectare: max. 90 quintals per hectare.
Harvest: Manual in 16–18 kg crates.
Harvest and vinification: The whole, perfectly intact grapes are lightly pressed. The resulting must, once almost clear, is left to ferment in temperature-controlled steel barrels. In spring, after several rackings, the wine is bottled for secondary fermentation.
Maturation and aging: The Dosaggio Zero wine ages for more than 24 months in the cellar in special stacks. The storage temperature is constantly monitored, maintained at around 16°C, and it is released for sale no earlier than 30 months.
Sensory profile: Herbaceous, yeasty nose, with notes of fairly ripe yellow fruit, spices, and light hints of cheese. Floral flavors of red berries and a hint of tobacco. Relatively fine bubbles, a persistent and spicy finish.
Sensory profile: Medium-high complexity and persistence.
Dosage: Max. 2 g/L.
Alcohol content: 12.50% vol.
