From our Feudo di Mezzo winery, located in the heart of Etna's viticulture, this wine is made from
Carricante grapes, in search of a contemporary expression of this grape variety, grown according to
sustainable and organic criteria, in the splendid and unique terroir of Etna.
SOIL TYPE: soils with perfect exposure and
position, black from lava sands and therefore
extraordinarily rich in minerals with abundant
structure and large size; surrounded by woods
and more recent lava flows.
ALTITUDE: 690–720 meters above sea level
YIELD PER HECTARE: 73 quintals
TRAINING SYSTEM: espalier with
Guyot pruning system.
PLANT DENSITY: 5,050 vines per hectare.
GROWING METHOD: According to
organic farming criteria and the SOStain® protocol;
soils covered with grass and spontaneous flora to increase
organic matter, promoting the vitality of the
soil microfauna; phytosanitary protection with sulfur
and copper in minimal quantities; pest control with
insects, mating disruption, and the application of
natural tonics such as zeolite, kaolin, and
plant extracts.
HARVEST TIME: September 27 to October 2.
VINIFICATION: The grapes, harvested by hand in
15-17kg crates, were immediately chilled at 6-8°C overnight; the following day, they were
hand-selected on a vibrating table and sent for
light destemming and soft pressing.
The must, decanted for 3-4 days, was racked
and fermented at around 15°C, 80% in
steel tanks and 20% in 25- and 50-hl oak barrels and oak tonneaux
Never.
AGING: Until March in the same
containers with stirring of the fine lees.
FIRST BOTTLING: June 2024.
ALCOHOL CONTENT: 13.5% vol.
TOTAL ACIDITY: 5.75 g/l
PH: 3.31
AGEING CAPACITY: 5 to 7 years.
BOTTLE SIZE: 0.75 l; 1.5 l
BOTTLE WEIGHT: 400 g (0.75 l)
CLOSURE: Single-piece natural cork; DIAM®.
TASTING NOTES: Carricante grapes
on Etna always provide enormous satisfaction
because the marriage between the black sands and the
altitude provides complex aromas and three-dimensional
flavors. This vintage offers notes of white acacia flowers, fresh
almonds, and mountain peaches on the nose; juicy
and full-bodied on the palate, with notes of yellow plums and prickly pears.
PAIRING: Perfect with raw fish and fresh
fruit, with seafood-based first courses, and stretched-curd cheeses.
It also makes a refined aperitif.
