Il Castagno from the Fabrizio Dionisio winery is an enveloping and intense expression of the Syrah grape variety in Cortona, in the province of Arezzo, where this grape has found an ideal territory suited to its growth and vinification. The Cortona area, in fact, is one of the few in Tuscany, if not the only one, to be able to boast a variety of Syrah-based reds of great value and elegance, not obtained from the prevalent Sangiovese, widespread from the Tuscan-Emilian Apennines to southern Maremma. The cause of this, it is said, is above all the Napoleonic French occupations of Tuscany at the end of the eighteenth century, which imported this grape variety originally from the Rhone Valley and which over the centuries has developed its potential, unique in Val di Chiana. In particular, Castagno di Dionisio is obtained from carefully selected grapes, coming from vineyards located entirely in the municipality of Cortona and characterized by a very low production yield per hectare - a maximum of 40 quintals from 5000 plants - and from galestro soils with limestone, sandstone and quartz inserts. The bunches are destemmed and subjected to an extremely soft pressing, aimed at preserving the integrity of the grapes. The alcoholic fermentation is then carried out using indigenous yeasts and the must, after a three-week maceration with the marc, is transferred into French oak barriques, where it will remain for 24 months.

At the end of this refinement, Il Castagno di Fabrizio Dionisio emerges powerful, harmonious and balanced, characterized by an impenetrable ruby ??red color and dense pigmentation, crossed by brilliant purple flashes. On the nose it presents a vast depth of aromas, predominantly fruity with blackcurrant and raspberry jam, with herbaceous details of fern and Mediterranean scrub surrounded by a sprinkling of white pepper, a scent that also returns to the taste analysis together with a perception of richness and materiality. It concludes the tasting with a lively freshness and a dense tannic texture, which make the sip satisfying and comfortable.
