The Champagne Brut Zéro by Frederic and Rodolphe Minière is born on the clayey and sandy soils of Hermonville and is a blend of Pinot Meunier from the “Couturelles” parcel and Pinot Noir and Chardonnay from the “Les Fontenelles” parcel. After harvesting, the three vines are vinified separately and the fermentations always take place in barriques. The vins clairs mature for 6-8 months on the fine lees and with periodic bâtonnage, without carrying out malolactic fermentation. The final blend is made with the addition of 15% reserve wines. The refermentation in the bottle precedes the long rest on the lees, a trademark of all the Champagnes produced, in this case 66 months.
Brut Zèro is a Champagne born in the name of purity, therefore not dosed, of great structure and elegance that presents itself in the glass with a bright golden yellow color with an extremely fine perlage. On the nose it recalls toasted notes of wood, almond and citrus and light hints of pastry and vanilla. The sip of Brut Zèro is characterized by a splendid vertical and deep fruit, complex, mineral and wonderfully long in its finish. Disgorgement 01/2022
