PRODUCT INFORMATION

Dom Perignon's "P2" Brut is a vintage Champagne of great charm and elegance, intense and extraordinarily balanced, produced by the famous Maison in Épernay, in the Champagne-Ardenne region of France. This wine is a blend of grapes, resulting from the traditional union of the finest selections of Chardonnay and Pinot Noir, sourced exclusively from the Maison's Grand Cru vineyards, located in the municipalities of Ay, Bouzy, Verzenay, Mailly, and Hautvillers for the Pinot Noir, and from those of Cramant, Choully, Avize, and Le Mesnil for the Chardonnay. The distinctive feature of "P2," or Plénitude Deuxième, is that it is a Champagne capable of defying time and gradually acquiring greater flavor fullness, while maintaining the great minerality that is a hallmark of the Maison. Indeed, after several years of study, tasting, and comparison, Richard Geoffroy, Dom Perignon's cellar master, discovered that after the 7-8 years of aging on the lees required for the classic vintage, Dom Perignon Champagne continues to improve, not gradually, but through two major leaps: the first after about 15 years and the second after more than 25 years. This gave rise to two new labels, P2 and P3, respectively, which express the various plénitudes—windows of time in which the Champagne suddenly enters a new "fullness."

The "P2" Dom Perignon Brut is produced with grapes carefully selected in the vineyard and hand-picked into small crates. The bunches, brought to the cellar as quickly as possible, are then pressed directly and fermented in temperature-controlled stainless steel tanks for several weeks to obtain the base wine of the vintage. Liqueur de tirage is then added for secondary fermentation and the wine is then bottle-fermented, which then ages on its lees for nearly 15 years before being disgorged and topped up with the addition of liqueur d'expedition, as per the Brut category.

Dom Perignon's Brut "P2" displays a brilliant golden yellow color with a very fine and delicate perlage. On the nose, intense, broad, and complex aromas emerge, ranging from ripe yellow fruit, including peach and apricot, to floral notes of bergamot, aromatic herbs, and hay, leading to citrus, sweet spice, and buttery notes, with subtle toasted nuances of hazelnut and hints of iodine on the finish. On the palate, it is creamy, energetic, graceful, and refined, characterized by a surprising freshness considering its age and a slightly smoky aftertaste. This “P2” from the Maison Dom Perignon is a sumptuous, harmonious Champagne with great character, in which the complex maturity becomes light and which, to conclude with the words of the great Richard Geoffrey: “first it seems to dance on tiptoe, then it envelops you”
