Blanc Absolu Brut Blanc De Blancs The Champagne Blanc Absolu by Frederic and Rodolphe Minière is born on the clayey and sandy soils of Hermonville and is a pure Chardonnay from the lieux-dits “les Grands Blancs”. After the harvest and soft pressing of the bunches, fermentation takes place in French oak barrels. The vins clairs mature for a period of 6-8 months in barriques, on the fine lees with periodic bâtonnage, without carrying out malolactic fermentation. At the time of assembly, 20% of reserve wines from previous years are added. The second subsequent fermentation in the bottle precedes a long rest sur lattes, at least 54 months.
Blanc Absolu with a decidedly mineral stamp, presents itself in the glass with a straw yellow color with a fine and persistent perlage. The nose brings to mind hints of acacia flowers, citrus fruits, notes of toasted bread, honey and pastry. The sip is elegant and enveloping, fresh and mineral, an expression of the wonderful terroir from which it comes. Ample, creamy and with a savory and prolonged finish. Disgorgement 05/2021
