PRODUCT INFORMATION
Castello Romitorio Brunello di Montalcino is our pride and joy: the fruit of more than thirty years of work in harmony with nature in the Montalcino terroir. This wine expresses the Montalcino terroir with purity and embodies the best of the ancient local tradition of growing an excellent Sangiovese. The Romitorio winery is located in the northwest quadrant of Montalcino, where this classic Brunello is produced from Sangiovese grapes carefully harvested and selected by hand on the bench, before and after destemming. Fermentation takes place in stainless steel tanks, with a short initial period of cold maceration (below 20°C) on the skins for about 15-20 hours, followed by a higher-temperature-controlled maceration that can last up to 24 days. Separation of the skins and free-run wine begins around the 20th day, once fermentation is complete. Once the first-pressed wine is obtained, it undergoes natural malolactic fermentation. The wine ages in oak for approximately 24 months and, after bottling, is aged in Castello Romitorio's temperature-controlled cellars for another 12 months or so before being released for sale. There's something intoxicating and invigorating about this wine: a high nose of oak and fruit with accents of morello cherry, violet, and pomegranate. There are also hints of earth and, with aging, nuances of sage and soy. The tannins are deeply interwoven into the body, firm yet fine, and give this wine exceptional structure, a framework from which the fruit, oak, and aromas can fully express themselves. The wine unfolds slowly in the glass, becoming more sinuous and sensual as it comes into contact with air; the slight astringency of the tannins invites further sips. Bottle aging brings pleasant tertiary notes of leather and herbs, and the persistence and aroma are long-lasting. This wine makes its mark as soon as it is released, but becomes even more true to itself as it ages.
