The term Brunello identifies Italy and Tuscany all over the world, however many, despite having drunk it, know very little about this great wine and its history. The birth of the wine that everyone admires today, Brunello di Montalcino, dates back to the mid-nineteenth century, when some of the most attentive Montalcino winemakers engaged in technical experimentation. In their farms Clemente Santi and Tito Costanti had long since abandoned the traditional systems and started a production exclusively obtained from Sangiovese with a method of vinification completely unknown in Tuscany, where for the most part Chianti or similar wines were produced, combining the Sangiovese other vines.

The origin of the Le Chiuse company is very ancient, it was part of the possessions of the Biondi Santi family: it was, in fact, brought as a dowry at the end of the 1700s by Maria Tamanti when she married Clemente Santi. Their daughter Caterina married Jacopo Biondi and their son Ferruccio, Simonetta Valiani's great-grandfather, respecting his mother's wishes, added the maternal surname "Santi" to his.
It was he who, after fighting alongside Garibaldi, continued the work of his grandfather Clemente, enhancing and selecting the vines to obtain this particular clone of Sangiovese (large).
