Grapes: 85% Cabernet Sauvignon 15% Cabernet Franc
PROCESS
The grapes are harvested by hand, in small boxes, with a first selection of the bunches starting from the vineyard.
In the cellar the bunches are de-stemmed, the berries go through a vibrating sorting table where they undergo a further manual selection to optimize the quality of the grapes used.
Alcoholic fermentation takes place in thermo-regulated steel tanks at a temperature of 26-28 degrees centigrade.
At the end of the alcoholic fermentation a second fermentation takes place which takes the name of malolactic fermentation. After this process, the finished wine enters the phase of aging in wood, 2.25HL barriques. This is followed by a refinement in steel before bottling. Once packaged, the wine undergoes further refinement in the bottle before being marketed.
WINE DESCRIPTION
Visual: intense, lively ruby ??red color
Olfactory: intense, elegant, complex, red and black fruit (blueberry; blackberry; wild strawberry), withered red flowers, green pepper, nutmeg, vanilla
Taste: fresh, intense, full, full-bodied, persistent with fine tannins and an enveloping finish.
