PROCESS
The grapes are harvested by hand, in small boxes, with a first selection of the best bunches starting from the vineyard.
In the cellar the clusters are de-stemmed, the berries go through a vibrating sorting table where they undergo a further manual selection to optimize the quality of the grapes used.
Alcoholic fermentation takes place in barriques placed horizontally on rotary monoblocks, in this way the pomace is always immersed in the liquid part throughout the fermentation process, manual rotations are carried out daily to allow the best homogenization of the mass. At the end of the alcoholic fermentation the wine remains in maceration with the skins. At the end of maceration and after racking, the wine undergoes malolactic fermentation in the same wine-making barriques. After this process, the wine enters the phase of élevage in barriques until the moment of bottling. Once packaged, it undergoes further refinement in the bottle.
WINE DESCRIPTION
Visual: intense ruby ??red with purple hues
Olfactory: intense, ample, small berries, currants, blueberries and raspberries, closes on sour cherries in alcohol, blood orange, violet petals, bell pepper, coffee powder and graphite.
Olfactory taste: wide and persistent sip that denotes great body and harmony.
Pairing: pappardelle with hare ragù, grilled Chianina cheese, wild boar in strong dessert.
