VINIFICATION AND AGING
The whole bunches of Pinot Noir, picked entirely by hand, were given a soft pressing. The must obtained by this initial pressing went immediately into temperature-controlled stainless-steel tanks where the first alcoholic fermentation took place. In the spring of the following year, the wine began its second fermentation, this time in bottle, remaining in contact with its fine lees for an extended period of time.

Conte Aymo is bright straw yellow in color. Its creamy mousse is defined by a delicate and persistent perlage. The nose offers typical varietal aromas with pleasant sensations of red berry fruit. On the palate, Pinot Nero’s characteristic notes impart harmony, elegance, complexity and balance.
FOOD MATCHING AND SERVING TEMPERATURE
The elegance and personality of Conte Aymo pair nicely with fish or meat dishes of medium to high tasting intensity.
The ideal serving temperature is between 45 and 49 °Fahrenheit (7 to 9 °Centigrade).
